Marie Nielsen and Adrian Ciora opened Garden Restaurant & Vinbar in 2017 after meeting in the Copenhagen food scene. With a shared passion for good food made from scratch, they decided in 2017 to open their first restaurant together.
Food has always been at the center of Marie’s life. Ever since she was little, she has picked vegetables and herbs in the herb garden on the family’s farm on Funen and prepared the fresh ingredients together with the rest of the family. It is this atmosphere of enjoying a moment with people you care about that Adrian and Marie wanted to pass on to their guests. Although Adrian and Marie have since gone their separate ways, Garden Restaurant & Vinbar is now run by Marie in collaboration with her mother and father, Carl Peter. Together, they continue the family atmosphere and the high quality of the cooking, which has been the restaurant’s hallmark since the beginning.
Today, the family farm supplies raw materials to the restaurant in the form of freshly dug Danish potatoes and vegetables, which they also pickle themselves, just as the flowers are from there.
The choice of Garden as a name was inspired by Marie’s maternal grandfather, who served in the Royal Guard, which marches past the restaurant every day. A picture of Marie’s grandfather adorns the wall next to the bar.
